Canning & Salsa-fi-ing!

Hi Friends,


I thought I’d give you a quick update.  Things have been super busy around here – as they always are during the summer.  I wish I could just write blog posts mid-air as I think of them, because then there’d be a ton more!  However, finding a moment to sit down and write something just hasn’t happened recently! 

Anywho… some of the farm team has been away for 2 weeks on a family vacation/wedding trip out west.  This means that I’ve been surrounded by my husband, my two boys and our two apprentices full time for these 2 weeks.  Praise the Lord that we have great guys who are with us this year and I enjoy being around them!  I was very excited for church yesterday tho, partly for the Godly Message and partly to see some female companions!  {I will say we are blessed to have a neighbor lady help us process chickens every week so I did have her to bring some estrogen to all the testosterone I’m surrounded by!}  I love our church, and especially love the friendships I’ve built with the families/ladies there.  We’ve all become great friends.

Today starts day 3 of canning for me.  My grandmother canned things and I have memories of her making currant jam and sealing the jars with a thick layer of wax on each jar.  Those are memories that I hold dearly and bring a smile to my face.  My mom never canned foods when I was growing up so I’m learning from scratch here.  I helped my mother-in-law a few times here and there but with her gone it’s all to me!  And I have TONS of tomatoes that I need to do something with.  I have decided to make salsa and tomato sauce.  I have all my ingredients prepped and am ready to start here in just a moment.  Wish me luck!  I’ll post some pictures when it’s all done!
